Justin Rosé and the Golf Club Sandwich

Tomorrow, in honor of this year's British Open, I'm preparing my golf enthusiast husband a hole in one meal.  It's un- FORE -gettable...

For lunch, I'm serving:

Gillian's "GOLF CLUB" Sandwich

Recipe yields 1 serving

Ingredients:

3 slices bacon
2 slices Ciabata bread, pressed
2 tablespoons avocado with sea salt, black pepper and evoo
½ ounce alfalfa sprouts
3 slices (1 ounce) cooked deli turkey breast
3 slices (1 ounce) cooked deli honey ham
2 slices tomato
Red onion, thinly-sliced

Directions:

Place bacon in a heavy skillet.  Cook over medium high heat until evenly brown.  Drain on paper towels.

Spread each slice of Ciabata bread with avocado.  On one slice, place bacon, alfalfa sprouts, tomato, red onion, turkey and ham. Then top with the second slice of bread.

In keeping with the golf theme, I'm also serving "chip it in" chips with sweet chili and sour cream.  However, if you'd prefer a more healthy side, you could offer lightly-dressed greens instead.

For dessert, I'm serving:

Martha Stewart's "TEE-TIME" Cupcakes

And as a treat for myself, for working so hard, I think I'll have a glass (or two) of  "JUSTIN ROSÉ."

National Chocolate Day!

Open Your JAWS!

In keeping with the week's beach theme, I decided I would get my toes wet... in the kitchen.  And, this recipe was just perfect!

That said, open your JAWS for a sweet summer BITE, or two...




The only variation to the recipe, aside from using boxed cupcakes and store-bought buttercream icing, are the gold sand sprinkles I used in place of graham cracker crumbs.  I prefer the crunch!

Easy-to-make and fun to decorate, these seaside cupcakes will keep your hungry lil' sharks at bay!  Happy SUN and SAND!

Handmade Party Hats

I wish, like my husband, I was a natural in the kitchen.  Fate would have it though, I am just a natural at the table!  Or maybe, the sink.

I mean, Yummy Mummy, you make it look so easy! 

Butterfly Cakes, no problem!

Vanilla Bean French Macarons with painted Peonies, of course!

I feel accomplished, personally speaking, when I manage without error to cook bacon and eggs, or more embarrassing, boil rice.

But hope is not lost, because I am creative.  Here, for instance, are a few Yo Gabba Gabba party hats I recently made:

Eda-MOMMY and the Tofu Toddler.

I've long poked fun at my kid, and his voracious appetite. 

Whether he's training for the Mexican Food Olympics, or just bein' my Basmati Rice, Rice Baby, Aksel exhibits passion and true food zeal.

It's impressive!  Like most kiddos though he likes the classics:

Pizza...


Ice Cream...


Cake...


And, TIRAMISU!

But, where Aksel differs is what fascinates me most.  For instance, my boy LOVES parsnip soup, edamame, and of all things, TOFU!

Basically, he'll devour anything you put in front of him, and persistently slap the table for more, more, and still more.

It cracks me up! 

On a serious note though, I'm enjoying Aksel's open (FOOD) mind, while I still can.  Who knows if and when it'll change?  Not to mention, his open mouth is pretty darn cute, too.  Case in point...

Judy's 'JUST-THAT-EASY' Icing!


As I said earlier, my get-fit mind has been in the CUPCAKE gutter this last week.  So, I thought it only appropriate I purge my sugar sins by sharing GRAMMY's divine frosting recipe.

Bear in mind, I'm new at this whole cooking thing...

Judy's 'JUST-THAT-EASY' Icing!

Ingredients:

1 c. milk
1 small pkg. vanilla instant pudding
¼ c. powdered sugar
1 8 oz. Cool Whip

Directions:

Mix milk and pudding on low for two minutes.  Add sugar ~ then Cool Whip.  Remember cake or cupcakes need to be refrigerated.

I hope you enjoy Grammy's Cool Whip quickie.  I know I did!

OATS, What a Beautiful Morning!

My mother called it "mush."  She ate it as a girl. 

My father preferred Cheerios.  He ate them in the 80's.

We like oats.  We eat them everyday!  Aksel and me, that is.


It's my favorite time of day, too!  When we share a bowl for brekkie.

He takes a bite, and I take a bite.  He chuckles as we exchange back and forth.  He also thinks.  Basically, he's hungry for some answers.

Let me be more clear...

My shy boy is understanding a lot about life these days, and he's asking me about it.  About the simple things, like oats and SHARING.

Folks, he's curious.  And I'm the lucky one who gets to explain!

Over cinnamon oatmeal, we talk about it all each morning.  He just happens to communicate in the language of wide-open eyes, subtle gestures, and da-da-da.  It's BLISS though, and despite its simplicity, I'm learning things myself...

For instance, I now know why breakfast is the most important meal of the day.  So you know, I don't plan on skipping it any time soon!

OATS, what a beautiful morning!  OATS, what a beautiful day!  I got a wonderful feeling everything's going our way...

Basmati Rice Rice Baby!

My boy loves Indian food!  He's my basmati rice rice baby.  Since I'm on the subject of rice, I have a few additional thoughts to word. 

Not rice.  Same food zeal though!

Bear with me, I've been thinking!  Here goes nothing...

Being a good wife and mother really boils down to knowing your strengths and weaknesses.  So, I'll share a weakness.

For one, I can't cook.  I mean, I don't cook...

But really, I shouldn't ever cook!

I made rice once, and my husband reprimanded me for stirring it.  Then, for not putting the the lid on.

Funny enough, I even read the instructions to be safe.

As a side note, I'm thinking this might not be the best admission, seeing as we own a restaurant, but thankfully, my husband is a natural.  Besides, when he's not feeling motivated, there's a whole kitchen full of eager chaps ready to create my plate's desire.

Enough now with the weakness bit.  On to a strength..

Frankly, I'm most kitchen inspired by the colorful displays at Williams Sonoma and cupcake decorating kits.  

This leads me to a talent... PARTY PLANNING!

For one, I'm great at outsourcing.  I'm also crafty, but really, I know and realize that true beauty lies in the detail, and let me say, I respect the details.  Too much sometimes.
